Worldwide known by its singularity of its wines, Cafayate comes up now with news to the Salta-tables: one sparkling wine, absolutely created in the valley region and an artisan beer; BURBUJAS DE ALTURA and Ruta 40, respectively.
The Sparkling Wine is created by a woman winemaker from Cafayate, Tania Höy, in ¨Finca La Primavera¨ (Spring Farm), on Rout 40, five kilometers from Cafayate, on the way to Angastaco. Her family started to obtain the first Sparkling Wine elaborated in Salta. ¨It is a huge new in the local production, and all the process is entirely made in Cafayate with the symbol grape of the area: The TORRONTÉS¨, told us Tania, who worked in Bodegas Norton in Mendoza and in Paso Robles, California, US.
The method used to elaborate the Sparkling Wine is the ¨champenoise¨, traditional way to make the ancient champagnes. It consists maintaining the bottles in freezing chambers between 3ª and 5ª C during the fermentation in the bottle. ¨My father worked 20 years with Bodega Esteco and I was grown up in this environment¨, tells Tania.
His brother is Agriculture Science and joining the effort has made possible to produce this wine, ¨so we can obserb all the process which is ending in the sparkling wine¨, told the wine maker.
Tania studied in the Juan Agustín Maza University in Mendoza and with Carolina Cristofani are the unique winemaker born in Cafayate, and they both work there. “I can not describe the Sparkling Wine we reached with to many feminine notes. It is a versatile wine. We have achieved a product you can drink in every occasion and it combines very well with many plates¨, warn the wine maker. “The idea of distribution is not to bring the sparkling wine to the supermarket, but to personalize it to the consumer and so that he can have his own bottle. Every bottle has a necklace where it is simple explained the traditional method¨, remarks Höy.
Tania sais she ¨falled in love¨ with the Winery. “To make sparkling wine is a dream since 2014 and it started to be. My family has invested a lot of and we could made only 4.000 bottles, that we could share with people who told us they like it a lot. We had also a great support from the Instituto Nacional de Vitivinicultura (the National Institution that controls all the production of alcohol). But it is fundamental the impulse from my father and all the knowledge he has of vine and the wine process. Without him, it would be impossible to get to a product like this¨, she confess.
